How much memory would I need?

It depends on your queries, dataset size, and latency/throughput requirements. In general, for extremely low-tail latencies, you must have more memory. But if you're okay with higher-tail latencies, you can do with much less. The great news is that the system will be free to use for a month and at varying sizes, that you can use to determine how much memory you need for your workloads.
